1、三黄鸡出自湛江信宜县,故又名湛江鸡,购买时可让师傅帮忙宰杀干净,可省时省力。

2、应选一斤左右的三黄鸡入菜,重达两斤的三黄鸡,虽然鸡味较浓,但肉质较烟韧,短时间内不易煮烂。
