鱼面筋,年来颇流行。是用青鱼肉打成茸,加上调味料,入油锅炸制而成。与其说像面筋,不如说像油豆腐更为恰当。这鱼面筋吃在嘴里,有鱼的味道,却无鱼的影子,连刺都不用除,软滑弹牙,十分美味。

昨天无意中路过一个市场,发现有卖的,就买了一袋回家。一路上都想着用什么来配,觉得青笋(上海人叫香莴笋)不错,碧绿香嫩,煮后口感上与鱼面筋有那么两分相似。做出来卖相味道都不错,还用了一小部分来煮汤,与烩烧的有别有一种滋味。青笋烧的味浓香滑,煮汤清淡爽口,都好。
