1.猪肉,冬笋,泡好的木耳切丝,猪肉用蛋清,淀粉和小许盐腌一下,让肉丝嫩一些。k2\[

2.下面准备做蛋皮。打三个鸡蛋,然后加一些淀粉糊,打均匀。锅里加非常少量的油,少到什么程度,就是锅里不能有积油。事实上我是用干净的布把倒进去的油均匀的刷在锅底上,这样就能保证没有余油了。'i0P_~2S,I0q
开火热锅,火不能太大,然后把蛋液倒入锅内,同时转动锅,让蛋液均匀的摊在锅底。当锅边的蛋皮收缩向上翘起时就差不多了。这时只要把锅倒过来向菜板上轻轻一磕,蛋皮就掉下来了。我会把蛋皮再翻过来,用另外一面。:WVVPq1]V1q

3.准备馅料。油锅,先炒肉丝,再加笋丝,木耳丝,加些盐,鸡精,少许生抽调味。最后可以加点水淀粉让它粘稠些。因为这次蛋皮做多了,我又切了些丝放进锅里。肉丝熟了就可以盛出来放在切好的韭菜里拌好。

5.起油锅,多多的油,七八成热时把卷好的春卷放入,炸至外皮呈金黄色,发硬为止。ng a L],K

6.炸好后放到吸油纸上,稍为凉一下就可以切了。切的时候一般是斜着切,成菱形。

注意事项:

1. 蛋皮厚薄尽量均匀些,这样卷的时候不容易破zLm)q

2. 卷的要小心些,如果蛋皮摊地不好,就更要小心了V[*J0] gQ
3. 尽量的卷实一些,像我这次卷地就有些松了

有些像春卷,就是皮子用的是蛋皮,包一个大的在切开.

自己做就是比外面的好得多。餐馆里大多是烙的面饼,然后炒一份裹馅放在桌上自己卷,楼主这个后来又炸过了的,应该比较好吃
