鸡蛋(4个)低筋面粉(40g)咖啡粉(10g)吉利丁片(2片)热水(30g)

1 先来制作蛋糕片。蛋黄与蛋白分别打入无水无油的打蛋盆中
2 蛋黄加入15g细砂糖打发至颜色变浅,体积膨大
3 蛋白加剩下的细砂糖打发至捞起蛋清后,在打蛋头上能形成弯钩,
4 将打好的蛋黄糊倒入蛋白霜里,翻拌均匀
5 然后混合筛入低筋面粉和可可粉,用刮刀翻拌成蛋糕糊,
6 倒入铺好油纸的烤盘中,抹平表面,放入预热好170°的烤箱,中层,以上下火,烤8-10分钟即可

7 巧克力慕斯的做法。先将烤好的蛋糕用模具压出对应的形状,再压出一个小于模具一圈的蛋糕片
8 模具提前包上一层锡纸,然后将对应大小的蛋糕片放入模具底部备用
9 115g淡奶油小火加热至沸腾关火
10 蛋黄搅打起泡
11 将沸腾的淡奶油中的15g加入到蛋黄中,搅拌均匀
12 吉利丁片先用冷水泡软,再加入到100g温热的淡奶油中,搅拌至熔化跟淡奶油混合均匀

13 再将切碎的巧克力倒入淡奶油混合物中,隔水加热至巧克力熔化并与淡奶油混合均匀,先将融化好的巧克力溶液过滤一遍得到更加细腻的巧克力溶液
14 再加入到之前的蛋黄糊中,二者搅拌均匀得到巧克力慕斯液。
15 将做好的巧克力慕斯倒入模具中,再给表面铺上较小于模具的蛋糕片,放入冰箱冷藏至凝固
16 再来制作咖啡慕斯液,蛋黄加砂糖打发至黏稠颜色变浅,
17 淡奶油小火加热至沸腾关火
18 将淡奶油中的15g加入到蛋黄中,搅拌均匀,咖啡粉与热水混合成为咖啡液

19 咖啡粉与热水混合成为咖啡液
20 将吉利丁片先用冷水泡软,再加入到咖啡液中,隔水加热至吉利丁片完全熔化
21 将咖啡混合物倒入之前的蛋黄糊中,搅拌均匀
22 最后将搅拌好的混合物倒入100g的淡奶油中,搅拌均匀即成咖啡慕斯液。
23 将冰箱里的慕斯取出,给上层倒上咖啡慕斯液,稍微将气泡蹲出,放入冰箱冷藏至凝固
24 脱模后,切块即可食用
小窍门:
1,制作慕斯液时,加热后的淡奶油要一点一点的加入到蛋黄中,避免将蛋黄烫熟。 2,脱模之前,可以先用热毛巾或者吹风机吹一下模具四周,待四周的慕斯稍稍化开一些,就很容易脱模了
